1 Medium mixing bowl
1 Vegetable Grater
I prefer a large grate
Ingredients
8-10
medium carrots
(organic, peeled, grated)
1/4
cup
Greek Yogurt
1/4
cup
Mayonnaise
(can omit and just use yogurt)
1/2
cup
Raisins
(regular or golden- your choice)
1
can
Pineapple tidbits
Organic if possible (save the juice to mix with yogurt)

Apple Cider Vinegar
(optional- adds to gut health)
Instructions
Wash, peel and grate each carrot into a medium bowl
Add raisins and pineapple (without juice) to the carrots
Mix yogurt and mayonnaise together, whisk in 1-2 tablespoons of reserved pineapple juice
Add a splash of vinegar (optional)
Pour the yogurt/mayonnaise mixture over the carrot mixture and stir to incorporate.
Cover and place in refrigerator for at least an hour (over night is best)
Enjoy as a side dish or snack
